Apple cake with Ricotta

ingredients for 4 people:

    * 250g Ricotta Santa Lucia
    * 2 apples, cut into slices
    * 1 plain yoghurt
    * 3 eggs
    * 4 tablespoonfuls flour
    * 4 tablespoonfuls sugar
    * 1 lemon
    * butter

Preparation time FROM 30 TO 60 MIN

Mix the flour and egg yolks in a bowl.

Add the Ricotta Santa Lucia, yoghurt, sugar, lemon zest and stir until smooth. Fold in the egg whites whisked until stiff, and slices of apple. Butter a cake tin, arrange more slices of apple on the bottom and then fill with the mixture. Bake in a pre-heated oven (200°C) for 30 minutes.
