* 250g Galbani Santa LuciaŽ Mascarpone or Mascarpone Light
* 50g sugar
* 1 tin apricots in syrup

Apricot pudding with Mascarpone
Mix the well-drained apricots in the blender with sugar and Mascarpone. Wet individual moulds with the apricot syrup and pour the mixture in. Freeze till serving. Garnish with slices of apricots and mint.
