Carefully wash the potatoes, wrap them in kitchen foil and bake in the oven at 180°C for 45 minutes.
Remove the foil, cut a small slice off the top of each ‘jacket’ and spoon out the potato, taking care not to break the peel. Mash the potato and mix it with the Crema Bel Paese®, the egg yolks, a little salt and nutmeg.
With a piping bag, fill the ‘jackets’ with the creamy potato, sprinkle with the chopped hazelnuts and a few dabs of butter. Before serving, pop them back into a hot oven at 220°C to warm up and brown nicely.
